We combine this approach with a firm commitment to sustainability and wherever possible, using only the finest local Scottish produce. Once sourced, we let our imagination run riot and create contemporary ways we can pair these ingredients together to create a sensory overload that is as delicious as it is memorable.

This year we have partnered with Holyrood Distillery - the first Malt Whisky distillery in 100 years - in bringing back a very popular Courtyard Bar for Summer 2021.
